- Oil for frying
**For the Glaze:**

- 1-2 tablespoons milk
- 1/2 teaspoon vanilla extract
**Instructions:**
1. **Prepare the Batter:**
- In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract, mixing well.
- Combine the wet ingredients with the dry ingredients, stirring until just combined.
- Fold in the chopped apples.
2. **Fry the Fritters:**
- Heat oil in a deep fryer or large skillet to 375°F (190°C).
- Carefully drop spoonfuls of batter into the hot oil. Do not overcrowd the pan.
- Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove the fritters with a slotted spoon and drain on paper towels.
3. **Make the Glaze:**
- While the fritters are cooling, whisk together the powdered sugar, milk, and vanilla extract to create a glaze. The mixture should be thick but pourable.

Serve these warm, crispy apple fritters with a dusting of powdered sugar or a drizzle of honey for an extra touch of sweetness. Enjoy your homemade Southern delight!
